The story

Gatare sits above Lake Kivu in Nyamasheke, and the station has been experimenting with honey processing for a few seasons now — pulping the cherry but leaving the mucilage on through drying, so the bean takes on some of the fruit without the ferment of a full natural.

The result splits the difference in a way we find genuinely useful. There is rhubarb sharpness from the washed side and cocoa-nib depth from the natural side, tied together with plain cane sugar. It brews well hot and it is exceptional over ice.

Seasonal, and we mean it

We buy Gatare one pallet at a time and we do not reorder. When the sacks are gone the space on the shelf goes to whatever landed next — which is the honest way to sell a coffee this dependent on one particular drying season.
